Pasta With Roasted Vegetables & Greek Olives


  • 1 pack package Angel hair spaghetti 12
  • 1 large can tomato sauce
  • 1 can diced tomatoes
  • Fresh basil
  • teaspoon ½ minced garlic
  • cup ¼ green Greek olives (pitted)
  • 1 teaspoon Italian seasoning
  • 1 pound of lean ground beef
  • 1 tablespoon lemon juice
  • 1 cup sliced mushrooms (seasoned & roasted)
  • 2 teaspoons Onion, minced
  • teaspoon ½ oregano
  • cup ¼ parmesan cheese
  • teaspoon ½ black pepper
  • 1 pound of vegetables (seasoned, roasted with olive oil)
  • cup ¼ of sun dried tomatoes, chopped


  1. Cook spaghetti, rinse & drain, set aside
  2. Sear the meat with onions, set aside (color equal flavor don’t make gray and bubbly)
  3. Roast vegetables with olive oil (sear them don’t Cooke them)
  4. Roast sliced mushrooms
  5. For the sauce: combine all ingredients bring to boil then simmer on low heat for about 10 minutes


  1. Lay pasta in the bottom of the plate then the sauce, meat goes on top of sauce
  2. Then start layering the vegetables the mushrooms, add a the cheese & olives
  3. Garnish with fresh Basil.
