Posted on February 24, 2023

Take your butter from good to god-tier in a matter of minutes.

Adding brown butter to a recipe is one of the easiest ways to enhance your food’s flavor. Cookies, blondies and even pasta get some edge with a little brown butter mixed in. But with a little extra preparation, you can make brown butter taste like pure magic.

TikTok user @margie_nomura shared her recipe for whipped brown butter, a staple at the first restaurant she cooked in. “We were never allowed to take it off the menu,” the video says. Try making your own whipped brown butter and see why the simple, yet decadent trick is worth a few extra minutes.

Why Should You Whip Your Brown Butter?

If brown butter and whipped butter each take butter up a notch, then whipping your brown butter elevates it to heights beyond anything you’ve ever tasted. The rich, nutty flavor of brown butter takes on whipped butter’s unbelievably creamy, smooth texture. “I do this for dinner parties and everyone acts like I’m the greatest chef alive and it’s super simple,” one TikTok user commented.

Before you start, make sure you pick the best butter—or make your own butter from scratch!

Step 2: Cool it down

Once melted, transfer butter to a mixing bowl over an ice bath.

Step 3: Whisk it up!

Whisk butter until it reaches your desired thickness and color. Sprinkle salt into butter, if desired.

What to Add to Whipped Brown Butter

If you’re a fan of compound butter or just want to elevate your whipped brown butter’s flavor even more, there are a number of items you can mix right into it. Other TikTok users were quick to offer their suggestions, and they’re brilliant. For a more savory brown butter, try adding fresh minced garlic or garlic confit. You could also add a little miso paste and up the umami factor. For something on the sweeter side, try brown sugar, honey, cinnamon or even cardamom.
