Lofthouse cookies come with different frosting colors, giving you some flexibility on what colors you want your copycat Starbucks cake pops to be.

Ingredients
- 10-12 Lofthouse cookies, homemade or pre-packaged
- 1 8 oz. block of cream cheese
- White chocolate, for dipping
- Cake pop sticks
- Sprinkles, optional
Directions
Step 1: Prep the cookies
Place the Lofthouse cookies in a stand mixer. Using the whisk attachment, run the mixer to break apart the cookies until they are a fine, powdered mixture.
Step 2: Add the cream cheese
Beat in the block of cream cheese until the mixture is smooth.
Step 3: Form the cake balls!
Using a cookie scoop, scoop some of the cake pop mixture into a clean hand and roll it into a ball.
Step 4: Chill them
Place on a baking sheet lined with wax paper. Once all of the cake balls are finished, refrigerate them for 10 minutes.
Step 5: Prep the chocolate
Meanwhile, melt the white chocolate in the microwave.
Step 6: Assemble and decorate
Stick the cake pop sticks into each ball, then dip the cake pops into the melted white chocolate until fully coated. Decorate the outside of the pop with sprinkles. Wait for the chocolate to harden on the pops before serving, and enjoy!

It may sound tedious, but you are going to want to individually wrap each cake pop in plastic wrap. This helps to retain the moisture in the cake pop so they don’t dry out in the fridge.

They should last in the fridge for about one week, but if you need a bit more time, you could also store them in the freezer as well for up to a month.
